Vacation!

Woo! It's Thursday night and I am pretty much packed for vacation! I am leaving tomorrow evening and heading to our first stop of our month long travel: Chicago!

I hope it is tons of fun, and that I don't melt! I will try to post updates as much as I can, but sorry if I'm not here much the next month!

Peanut Butter Chocolate Ice Cream!

We made some today!

Just make simple vanilla ice cream, and when it is almost done add chocolate syrup and Reese's Peanut Butter cups! Ammmmazing! I had a big bowl full while watching the second Lord of the Rings movie, only one more to go!

I'm also really excited! I am going on vacation from next Friday until July 28th! I may not be able to post a lot while I'm gone, but I will have plenty to talk about when I return home! I am going to try to go to the amazing places I have heard about while reading blogs, and sample lots of tasty treats! I can't wait to share with everyone!

Happy Birthday... late!

So my brother's birthday was in the beginning of May, and I never made him anything (sorry about that!) So today, I made him a chocolate sheet cake, with vanilla chocolate chip icing! We also whipped up a batch of homemade chocolate chip ice cream to go with it! But the fun doesn't stop there! My friend gave me some Monster cookie dough! It was basically oats, peanut butter, chocolate chips, and M&Ms all in one cookie! I baked up a dozen of those and we all had cake and ice cream (or ice cream with cookies in my sake) while watching a movie of my brothers choice- The Lord of the Rings! Haha it was tasty, and fun and now I can't wait to watch the second and third movie, while of course chowing down on some sweets!

Peanut Butter Chocolate Bars...

... were AMAZING!!!

I had three of them today, and I wanted to eat the whole pan! They were just like peanut butter pie, but much lighter... hence how I was able to eat three of them and still want more! I'm going to get so sick off these, I must get rid of them! They are so good you won't want them around! ; )

Brownies, ice cream, and no bake PB squares!

Hey everyone! I've actually been baking, it's amazing!

I made brownies (yeeeah from a box, but it's better than nothing!) on Saturday. I tweaked the box a little bit to make what I think are the perfect brownies, which we ate with another batch of homemade vanilla ice cream! We used the same recipe as before, but this time we added chocolate chips to the mix, yummy!

Then today, my mom really want a peanut butter cup, so I went to the kitchen! I made a batch of no bake peanut butter cup bars, but since they have to set for three hours, we won't get to try them until tomorrow, darn!

I hope to be hanging with my friends this weekend, so hopefully more good treats are on the way!

Vanilla ice cream!

Gosh were have all the days gone?! I can't believe I graduated two weeks ago!

Since then, all I've really done is watched a lot of tv, spent time with my family, worked as an aide at summer preschool, and ate a lot of yummy food!

Speaking of food, I'm like OBSESSED with ice cream! I would eat it for every meal if I could. x0 So today, my mom asked if I wanted to try to make homemade ice cream, and I of course said "YES!!!" We decided to make plain ole vanilla to start off, and if we liked it we would try other flavors later. Not only did I like it, I LOOOOVED it! It was so thick and creamy, like a custard! It was delicious! I can't wait to make more ice cream, and hopefully bake some more stuff soon! : )

So if you just want to have some simple, but tasty vanilla ice cream here you go!!

Ingredients:
3/4 cup sugar

1/8 tsp salt

1 3/4 cups whole milk (we used half and half)

2 eggs, beaten

1 1/2 cups heavy whipping cream

1 tsp vanilla extract

(Haha I hope I remembered that correctly!) x0

Directions:
1. In a saucepan, combine sugar, salt, and milk. Cook over medium heat stirring occasionally until mixture is almost boiling. Reduce heat to low.
2. In medium bowl, slightly beat eggs. Slowly whisk half of the hot mixture into the eggs and pour back into saucepan. Cook over medium-low heat until slightly thick. Remove from heat and refrigerate for two hours.
3. When ready to freeze, stir in heavy cream and vanilla extract into the chilled custard mixture. Start ice cream maker and pour mixture through hole in lid. Freeze until you just can't wait any longer!

I had a nice big bowl of tasty ice cream, covered in chocolate syrup, chocolate chips, and half a peanut butter twix bar (my favorite!) : )
